I wanted to create something that was warming and was packed full of flavors. I pulled inspiration from a fall pizza that I like to get from True Food Kitchen. It's simple to throw together and can be made gluten-free.
I wanted to create something that you could share with others for the holidays or gatherings and one that everyone will love. It's made of whole foods, besides the bread, so it is very nutritious.
Butternut Squash - Give it a sweety, nutty flavor. They are one of my favorite things to add to winter dishes. You can get them at almost any grocery store and they are budget friendly. Butternut squash are also high in fiber, potassium, magnesium, manganese, and Vitamin A.
Yellow Onion - Add so much flavor and texture to any dish, and unfortunately lots of tears when you are cutting them. Onions (and garlic) are a staple in our house, they can really add something to any dish.
Kale - I used Curly Kale for this dish but you could use Lacinato/Dinosaur Kale. At first two stalks seem like a lot but the wilt down. Kale is a superfood packed with Vitamins A, C, and K.
Dried Cranberries - Add a great sweet and tartness to the dish. Try to buy unsweetened if you can to avoid all the added sugar. You could always use pomegranate seeds if you would rather, just add them in right before serving.
Almond Ricotta - This gives the appetizers a creamy, savoury flavor. If you want to put this dish together faster you can always opt out of making your ricotta and buy one of the many premade vegan options.
