Vegan Spicy Miso Ramen


Ramen is one of my favorite dishes/soups to eat. However, it took me forever to try to make it at home because I assumed it would be time-consuming and require a bunch of ingredients I didn't have and would never use again. Which it did the first time I made it because I didn't have the ingredients in the recipe I followed. With a few swaps of ingredients I actually had and a few more attempts, I found the perfect combination! I hope you will enjoy it as much as I do!







This ramen has a little spice too it but isn't too spicy which is perfect because you can always add more spice! It's creamy and has so much flavor. You will have extra miso paste mixture from this recipe that freezes well. I like to divide it up into portions for easy, quick to throw together meals.

  • Miso - This Japanese seasoning is made by fermenting soybeans with salt and koji. It isn't just used in ramen, I like to gravies, soups, sauces, and marinades. It is high in minerals and vitamins and can be a source of protein.

  • Garlic - I put garlic in almost everything! Anyone else? It helps boost your immune system and has anti-inflamitory effects.
