Vegan Chocolate Truffles


With Valentine's Day coming up, I wanted to give you an option for a dessert or treat that you don't normally have. These are super simple to make and only require 3 ingredients. Change it up from chocolate-covered strawberries and try something new! They are also gluten-free and make for great gifts for someone as well!







  • Cashew Cream - This can be used in so many recipes and it's so easy to make! Soak one cup of cashews in boiling water for 30 minutes, drain, rinse and blend in a high speed blender with 1 cup of water! That's it! You can add spices to it, or lemon juice and ACV and make sour cream. Cashews can be turned into anything! I always have them on hand!

  • Chocolate - I used baking chocolate but you can use a more gourmet chocolate if you'd like or whatever your favorite kind is.

  • Freeze Dried Strawberries - I used a food processor and blended this up into a powder so I could roll the truffles around in it to cover the outside. You could use any sort of freeze dried fruit here. I choose strawberries to give it a pink coating.

  • Hazelnuts - Want to make it more like a vegan Ferrero Rocher chocolate? Stick a whole hazelnut in the middle of your truffle before you roll it. This is my favorite way of making them!

  • Cacao Powder - I like to use cacao powder verses cocoa powder because it is less processed and doesn't have the added sugar, or dairy in it. Because they don't use high temperatures to make it, the essential minerals and vitamins aren't lost in the process.
